Yummy In My Tummy

I have been blessed with a mom who can craft, cook, bake, sew, write . . . you name it, she does it!

Tonight I wasn't hungry, so instead of eating dinner. . . I baked! Mommy would be so proud of me. Somewhere along the way, I caught the domestic bug!

First, I ran out of granola yesterday and was in need because I love it in my yogurt. After my run,
I began making the granola while Ryno met with his online class.

I used this recipe HERE and added in craisins once it was cool! It's ready for my yogurt tomorrow!

While I was waiting on the granola, I remembered the huge zucchini I got from work. Someone was super generous! I mean, "look at the size of that thing" (said in a Sweet Home Alabama voice)! I couldn't let it go to waste!

I knew Mom added the zucchini muffin recipe when she made a cookbook of family recipes for me. It was a Christmas present the morning before I got engaged! Nannie has passed this one along to us now.

The kitchen still smells super yummy! I love the subtle taste of the zucchini in the muffin.

So, that was my Thursday evening once I got home from work, the grocery, and my run! I hope yours was fabulous!

Chicken and Avocado Soup
My menu for dinner this week includes avocados a lot! Back on our Mexico trip, I ate guacamole every day for lunch. I guess I missed it!

Avocados are loaded with nearly 20 vitamins and minerals and the good fat! Click here for more recipes and nutritional info.

So, if you checked out my Pins from Oh, How Pinteresting on Wednesday you'd see that I had a delicious picture of the avocado and chicken soup from Gina over at Well, I made it for me and the Dossinator yesterday. I am in love and can't wait for dinner tonight!

Show Us Your Life: Appetizer Recipes
We have an event at least 1 - 2 times a month where we bring an appetizer, so good recipes and crowd-pleasers are a must! I have a couple that we use frequently, so enjoy. Let us know if you try them!

Cinnamon Pita Chips with Nutella.

*large bag of round plain pitas.
*butter (spray butter works well)

On a pan spread out the large, round pitas. Preheat oven to 350*. Next, spray a little bit of butter on each pita. Then, sprinkle cinnamon onto the pitas. Do this to each side. Place in oven for 10 minutes or until a bit crisp. Then, cut each pita apart into 8 triangles.


Scoop a couple of tablespoons of Nutella into a microwave safe bowl and heat it up for about 30 - 40 seconds and stir to ensure it's all warm.

Place on a pretty serving platter with grapes and strawberries! Then, hope that you get some before your guest devour this simple, easy recipe!

NEXT, this is something you have probably had, but what a goodie!

THE Cheese Dip

*This is totally Ryan's appetizer for our small group, and they love it. He would like it called Dossinator's Queso Dip!

*1 lb of sausage
*Velveeta - big block

First, cook the sausage and drain the grease. I like to buy reduced fat sausage, but at times Mr. Doss complains. Next, place the Velveeta, sausage, and a can of Rotel or salsa in the Crock Pot and stir together. Let this warm up and enjoy when the dip is smooth! Serve in the Crock Pot with your favorite tortilla chips. We like the scoops!

My spin on enchiladas! Dosschiladas
So, tonight I came home from work, played with Lyla, went on a run (2 proud), and then remembered I had to make dinner. Well, I didn't have to because we have some leftovers, but I wasn't feeling them AGAIN! Last week when I went to the grocery, my least favorite place on earth, I bought items to follow a recipe online at Well, I was ready for that one...except for the directions called for baking the dish for an hour and a half! IT WAS ALREADY 7ish. I was not about to have a grouchy Dossinator. I like him just like this: {helping prepare the tortillas}To make these yummy Dosschiladas:
1. I boiled the chicken (1 lb).
2. Next, I mixed up fat free sour cream (8 oz), shredded mozzarella cheese (2 cups), 1/4 tbsp of grounded red pepper, and added in my diced chicken to a large bowl.
3. Ryno started taking the flour tortillas and frying them in oil for 5 seconds on each side. When they were done he dipped them in a bowl of green enchilada sauce and layed them on the cutting board. {I normally never take off my ring unless I have to get my hands dirty}4. I took a spoonful or so of the chicken dip and rolled it up nice and snug in the tortilla.
5. The tortillas were placed in a 9 x 13 pyrex and placed in the oven for 20 minutes @ 375*.

ONE WORD: Delicious.

Ryan says this is our new staple. We had it with some natural salsa. It would also be great with some green onions inside. For 2 of these yummy delicacies it is under 220 calories and under 4 grams of fat. That's a yes in my book!

Pictures + Cooking
Lately, the only way that I have enjoyed cooking is by doing my favorite thing TAKING PICTURES! So, here is a recipe I found over at The Pioneer Woman and thought my healthy-eating friends may enjoy!

I found this great recipe while making my grocery list! Ryan wasn't the biggest fan because of the lack of meat, but he still ate it all!

First, boil your bowtie pasta. I get whole grain!

Chop up your zucchini in smaller chunks!

Slice grape tomatoes in half. *I tried not to eat all of them!

Mince parsley. I am not the best at this as I kept thinking I was about to chop my fingers OFF!
Mix it all together with a squeeze of lemon juice and a couple of tablespoons of extra virgin olive oil and put it in the fridge. I stuck mine in the freezer for about 20 min. since we were hungry.

Loved it! It is a great spring/summer meal with plenty of raw veggies! Next time I may add in some shrimp or a little chicken so Ryan will like it more!

We watched Life As We Know It with Katherine Heigl and Josh Duhamel! I loved it in the theaters and Ryan got to see it for the first time. Great one if you haven't seen it!
